Alain Rondelli, as chef and owner of the acclaimed Alain Rondelli restaurant in San Francisco, changed America's perception of French cooking. His restaurant developed a reputation for beautifully prepared meals that emphasized the flavors of fresh ingredients. In that same spirit, Alain now offers champagne sauces which he created and refined during his twenty years as a chef in both france and America. In his own words:

My champagne sauces emphasize the flavors of fresh fruits and vegetables, and add new excitement to meat, fish and poulltry-yet are easy to use. Original Champagne Sauce: The Original Sauce features the flavor of fine French champagne vinegar in a blend that's versatile and ready to use. Use this as a dip for fresh vegetables or as a dressing on salads. Whisk your own spices into the sauce and use in stir-frying, sauteing or baking. Its pure flavor emphasizes the scent and taste of the spices. Mix it with soy sauce, fresh ginger, and sesame seeds for a marinade that gives meats and poultry succulent flavor. Blend this with freshly ground pepper, olive oil and lemon juice to create a perfect vinaigrette.

Nine Spice Champagne Sauce: This sauce captures the flavor of Mediterranean cooking with an exotic combination of cloves, cinnamon, ginger and other spices. It gives meat, poultry and game a rich new flavor when used as a marinade or barbecue sauce. Pour it into a stew or drizzle over couscous. This sweet and spicy sauce is the base for Alain Rondelli's recipe for moist, luscious gingerbread.

Cracked Black Pepper Champagne Sauce: Here we have an aromatic blend of peppercorns and balsamic and champagne vinegar. It servers as a rich accent on any food that you would season with freshly ground black pepper. Use it to pan-fry beef or tuna steaks, or as a memorable dip for ripe strawberries or goat cheese.
